Healthy Recipe #2

I hope this recipe finds you healthy and happy. I am still working at keeping the weight loss going and I pray you are as well. Here is another recipe that I find is really tasty and I don’t feel like I am missing out on anything. Sometimes I even have it with a slice of garlic toast if I haven’t gone over my starch intake for the day.

For this recipe I didn’t add any seasoning to the meat because the sauce and tomatoes already have so much flavor. As before, feel free to adjust things to your taste. Bon Appetite!

 

Spaghetti (w/ Spaghetti Squash Instead of Pasta)             (Makes 4 Servings)

2 Medium Spaghetti Squash

1-24 oz. Jar of your favorite Pasta Sauce (I use the Aldi Brand)

1-16 oz. Package of Ground Turkey (I use Jenny-O)

1-14.5 oz. Can of Diced Tomatoes with Basil, Garlic, and Oregano (I use Aldi Brand)

 

  1. Prepare the Spaghetti Squash . (I use the microwave method because it’s quicker.)
  2. While your squash is cooking, brown ground turkey in a large frying pan.
  3. In the same pan add the diced tomatoes and pasta sauce. Stir.
  4. Reduce the heat to medium-low. With a lid on the pan simmer sauce for about 25-35 minutes.
  5. Once the squash is cool enough to touch, remove the spaghetti like strings; placing each half on one plate; about 1 ½ cups.
  6. Pour one cup of prepared sauce on top of squash and enjoy.
